Heavenly dinner rolls in a fraction of the time! I love soft dinner rolls. They make any dinner better. And when they come out warm from the oven, that is my idea of heaven, but making homemade yeast rolls can be complex and time-consuming. That’s why I love my quick dinner rolls. They are light and fluffy and take only about thirty minutes to make. They have all the delicious flavor and texture of regular dinner rolls but take only a fraction of the time. Slather on some butter and honey, and you may not make it to the main course!
Belle’s Quick Dinner Rolls
1 cup warm tap water
1/3 cup oil
1/4 cup sugar
2 tablespoons active dry yeast
1 egg beaten
1 tablespoon softened butter
½ teaspoon salt
3 to 4 cups flour
3 tablespoons milk at room temperature
In a large bowl (I use my stand mixer), combine 1 cup of water, oil, sugar, and yeast. Let sit until yeast is bubbly (about 8 minutes). Stir in beaten egg, softened butter, and salt. Add flour, one cup at a time, until you have a soft dough that isn’t sticky but still soft. Knead by hand for 10 minutes or 5 minutes with a stand mixer. Divide dough into 18 even pieces, and form into balls. Place in a greased pan and cover with a kitchen towel. Let rise for 10 minutes in a warm place. (You can allow them to rise to an additional 30 minutes if time allows). Lightly brush with milk and bake on the middle rack for 10-12 minutes or until browned.
