A sweet and spongy 3-ingredient cake that is under 200 calories! Sometimes I just need a little treat- something sweet, spongy, and easy to make. My 3-ingredient berry cakes are just that. A box of cake mix, a can of soda, and some fresh berries, and you have a moist and delicious little cake that comes together in less than thirty minutes. There is no need for frosting. I sift a little powdered sugar over the top, and these cakes are ready to go. And using diet soda makes this treat one that you can enjoy at under two hundred calories per cake. Tasty, easy, and no guilt- What could be sweeter than that?
Belle’s 3-ingredient Berry Cakes
1 (15-ounce) box yellow cake mix
1 can lemon-lime soda (I used diet)
2 cups fresh berries (blueberries, raspberries, blackberries)
Spray 24 muffin tins with cooking spray. Mix the cake mix and soda until well combined and frothy. Fold in the berries. Fill muffin cups 2/3 full. Bake at 350 degrees for about 25 minutes or until lightly browned and spring back when touched. Cool, invert on serving plate, and dust with powdered sugar if desired.
