A decadent chocolate cake that looks as good as it tastes

So much of what makes a dessert delicious is anticipation, and when you see my bourbon brownie cake, it screams chocolate. This cake even looks decadent, and yet it’s so easy to make. The cake is super rich and moist, and don’t let the mayonnaise throw you. It is the ingredient that gives the cake its moistness. The chocolate chips also add to its loaded chocolaty flavor. Don’t want to use bourbon- substitute it with some vanilla. Slicing each piece in half and layering with topping is what makes it extra special, but if you want to save time, this cake is rich and delicious plain or dusted with a little powdered sugar.
Belle’s Easy Bourbon Brownie Cake
¼ cup unsweetened cocoa powder
¼ cup semi-sweet chocolate chips
¾ cup boiling water
2/3 cup mayonnaise
¼ teaspoon salt
1 ½ teaspoons baking soda
¾ cup sugar
2 tablespoons bourbon (or 1 teaspoon vanilla)
1 ½ cups flour
1 (8 ounce tub) Whipped Topping
Chocolate Syrup (if desired)
In a large bowl, place the cocoa powder and chocolate chips. Pour in the boiling liquid, and let it sit for a few minutes, then whisk until smooth. Whisk in the mayonnaise, teaspoon salt, teaspoons baking soda, and sugar until smooth. Then whisk in the bourbon or vanilla, and then the flour. Mix well to remove any lumps. Pour the batter into a greased 8-inch pan (square or round) or line with parchment paper. Bake at 350 degrees for 30 to 40 minutes, until the top springs back when the center is lightly pressed or a toothpick comes out clean. Remove and invert onto a plate and let cool. To serve, cut serving sized pieces and then slice those pieces in half through the center and fold back (like a sandwich). Spread the bottom piece without 3 tablespoons whipped topping and then place the other half on top. Spoon a dollop of whipped topping on top and drizzle with chocolate syrup if desired.
