This time of year is all about fresh food. My garden is starting to produce and I love using all those fresh vegetables. One of the early crops is the snap peas. They are tender and sweet and even though I find myself eating them while I’m standing in the garden, they are also perfect for salads and stir fry.
However, I think my Asian Snap Peas are my favorite way to prepare them. This recipe is super quick and simple, but this dish is so flavorful and perfect as a side dish with grilled steak, chops, or chicken.
If you don’t grow your own, it is easy to find snap peas in the store, but make sure they are fresh. That wonderful fresh snap is what makes this vegetable, and this dish, so good.
Belle’s Asian Snap Peas
1 pound fresh snap peas, washed and trimmed
2 tablespoons vegetable or peanut oil
½ teaspoon sesame oil
¼ cup soy sauce
½ teaspoon Sriracha (chili sauce)
1 teaspoon brown sugar
1 teaspoon sesame seeds
In a bowl, whisk together the soy sauce, Sriracha, brown sugar and set aside. In a large fry pan, heat the oils. Add the snap peas and fry just until they start to get tender and the skins start to brown. Stir in the soy sauce mixture and stir to coat. Cook for about 2 minutes longer so sauce can caramelize. Sprinkle on the sesame seeds just before serving.
