Belle’s Fresh Berry Sauce

My fresh berry sauce is a sweet and saucy way to use seasonal berries. One of my favorite things in my garden is my berry patch. I love fresh, sweet berries. I make jam, pies, or eat them while standing out in the middle of the vines, but one of my favorites is my fresh berry sauce. It’s perfect for a topping on cheesecake, pancakes, or just about anything you’d like to add some fresh, sweet flavor. This sauce is so simple to make and can be stored in your fridge for up to a week, so why not make a double batch and find other wonderful ways to enjoy it!

Belle’s Fresh Berry Sauce

2 cups fresh berries, divided

⅓ cup sugar

1 teaspoon vanilla

1 teaspoon cornstarch

Combine 1 cup fresh berries, sugar, and two tablespoons of water in a small pan over medium heat, stirring until the berries soften (if using blueberries, they will begin to pop). In a cup or small bowl, combine the corn starch with another two tablespoons of water. Add to the pan and stir until sauce thickens. Add the remaining 1 cup of berries and cook for one minute. Remove from heat.  Add the vanilla. Stir well and serve warm or at room temperature.
