Two dessert favorites in one! Chocolate chip cookies and brownies are two dessert favorites that are so delicious on their own, but imagine them combined into one sweet treat. My chocolate chip cookie cups are full of gooey goodness and are surprisingly easy to make. A box of brownie mix is the base, and then a rich buttery cookie dough is used to fill it. It all bakes together in a layered, chocolatey little package that will make the question of “cookie or brownie?” a thing of the past!
Belle’s Chocolate Chip Cookie Cups
1 (18-ounce) box brownie mix
½ cup chopped pecans (optional)
6 tablespoons butter flavor shortening
2/3 cup packed brown sugar
1 tablespoon milk
½ tablespoon vanilla
1 egg
1 1/3 cup flour
½ teaspoon baking soda
½ teaspoon salt
½ cup chocolate chips
Line 24 muffin tins with paper baking cups. Mix the brownie mix according to package directions. Divide the batter into the muffin cups. Sprinkle with the pecans, if using, and then set aside. In a large mixing bowl, beat the butter flavor shortening, brown sugar, milk, and vanilla until fluffy. Beat in the egg. Mix the flour, baking soda, and salt in a separate bowl. Add to the wet mixture and combine well. Fold in the chocolate chips. Shape the dough into rounded teaspoon-size balls and place them in the center of the brownie batter. Press down slightly. Bake at 350 degrees for about 25 minutes. Cool completely. If you have extra cookie dough- make cookies by placing them on a cookie sheet with a cookie scoop and bake at 350 for 11 minutes.
