A simple but delicious cookie with the flavor of a churro! Food is a big part of life for me, even when it isn’t the holidays, but I’ve realized this time of year, it is the treats that I really remember about our family’s holiday food traditions. Cookies are one of the biggest parts of this. My churro cookies are one that I named because they remind me of the churros we always love at Disneyland. They are crispy, light, and full of cinnamon sugar flavor. They are one of the easiest cookies I make and also one of the most asked for. I used to use the frozen puff pastry, but now I’ve been able to find it in an easy-to-unroll sheet next to the refrigerated cookie dough section at the store. This cookie is perfect for when you want a quick but delicious sweet treat, and when it’s the holiday season, who doesn’t want that?
Belle’s Churro Cookies
1 package refrigerated puff pastry sheet
½ cup sugar
1 teaspoon cinnamon
In a small bowl, mix together the sugar and cinnamon. On a large, flat surface, sprinkle half of the sugar mixture. Unroll and place the sheet of puff pastry on top, and with a rolling pin, press it into the sugar. Sprinkle some of the sugar mixture on top and roll it into the sheet. Turn the pastry sheet over and press down again. You’re trying to get as much of the sugar mixture into the pastry sheet. Starting on the long side of the sheet, fold each side to the halfway mark, then fold each side again to the halfway mark, then fold in half. Using a very sharp knife, cut into 1-inch slices and place on a parchment paper-lined baking sheet. Sprinkle all the cookies with some of the remaining sugar mixture. Bake at 425 degrees for about 10 minutes or until cookies puff up and brown slightly.
