A simple but flavorful dinner that is perfect for the holiday bustle! A simple and easy dinner can be a lifesaver during the holidays. My BBQ chicken thighs and potatoes is not only easy to make, but is satisfying and delicious. The boneless chicken thighs are cooked all day with the potatoes in a tangy BBQ sauce, making everything tender and flavorful. I like to use yellow potatoes because they add a creamy texture that is perfect for this dish. When serving, I like to smash the potatoes with a fork, place the chicken on top, and then ladle the sauce over the top. This dish couldn’t be simpler, but it’s so good. It will help relieve some stress and help keep your holidays merry and bright.
