Belle’s Honey Soy Skillet Chicken

A simple chicken dish that is big on saucy flavor! Chicken is one of the most versatile and healthy sources of protein, and there are so many ways you can cook chicken. One of my favorites is also one of the most simple. My honey soy skillet chicken is ready in less than thirty minutes and is fork tender with a delicious honey soy baste that doubles as a sauce for rice. You score the chicken, which allows the sauce to soak in while it cooks, and a light dusting of flour gives the chicken a nice coating that keeps it juicy and moist. It’s a simple and quick dish with lots of saucy flavor.

Belle’s Honey Soy Skillet Chicken

4 boneless skinless chicken thighs

½ teaspoon salt

½ teaspoon pepper

½ cup flour

4 tablespoons butter (divided)

1 tablespoon soy sauce

1 tablespoon rice vinegar

4 tablespoons honey

1 tablespoon fresh parsley, chopped

Mix the soy sauce, vinegar, and honey in a small bowl. Set aside. Place the flour on a plate or shallow bowl. Score each chicken thigh on one side by cutting a quarter-inch deep slices, one inch apart, in a crisscross pattern. Don’t slice all the way through. Sprinkle each thigh with salt and pepper on both sides. In a large, rimmed fry pan, heat 2 tablespoons of butter until melted and frothy. Fry thighs until golden brown, then turn and cook on the other side. Add the additional tablespoon of butter and cook until melted. Add the soy mixture to the pan. Turn the chicken to coat on both sides. Turn heat to simmer, cover, and cook for about fifteen minutes. Sprinkle with parsley before serving.
