Belle’s Asian Pork and Brocolli

A fresh and flavorful Asian dish the whole family will love! Pork is such a flavorful and versatile protein. It’s easy to prepare and pairs well with all types of dishes. The juicy and tender strips of pork in my Asian Pork and Brocolli are coated in a savory sauce that is perfect to serve over rice. The broccoli and cashews add both flavor and texture to this dish and the fresh ginger gives it such a fresh flavor. You can increase or decrease the amount of chili flakes, making this a warm and hearty dish that is easy to make and one the whole family will love.

Belle’s Asian Pork and Broccoli

1 tablespoon oil

4 cups onions, sliced thin

3 cups broccoli florets

1 pound pork tenderloin, sliced thin

1⁄4 teaspoon crushed red pepper flakes

½ cup green onion, sliced

1 tablespoon sugar

1 tablespoon fresh ginger, minced

3 teaspoons minced garlic

½ cup chicken broth

3 tablespoons soy sauce

½ cup cashews, chopped

2 teaspoons sesame oil

2 cups cooked rice

Place the oil in a large skillet and set it to medium-high heat. Add the onion and cook for about 5 minutes, stirring occasionally. Remove from pan and set aside. Add the broccoli and cook for about 3 minutes. Add the pork and red pepper and cook for several minutes or until the pork loses its pink color. Reduce heat. Stir in the green onions, sugar, ginger, and garlic, and cook 30 seconds. Add the broth, soy sauce, and sesame oil. Cook for 1 minute. Stir in the cashews. Serve over rice.
