Pillowy, soft, and chewy cookies that disappear as quickly as they are to make! So often, the simplest recipes are the best. Not only because they are quick and easy but also because their flavors are uncomplicated and just plain delicious. My butter pillow cookies are a great example. With just a few ingredients, these cookies come together quickly, and their chewy, sweet flavor has them disappearing quickly as well. I love the soft, moist, pillowy texture, and the light almond flavor is just right. They aren’t fancy with lots of chips, nuts, or other ingredients. These simple cookies are just simply delicious.
Belle’s Butter Pillow Cookies
1 box yellow cake mix
1 stick butter, softened
8 ounces cream cheese, softened
1 egg
1 teaspoon almond extract
Powdered Sugar
In a large bowl, mix together the dry cake mix, butter, cream cheese, and egg. Using a cookie scoop, roll the dough into balls and then roll them into the powdered sugar. Place on a parchment-lined baking sheet and bake at 350° for 12-15 minutes. Cool completely on the pan, then dust with additional powdered sugar.
