A rich and chocolatey cookie that comes with a rich story! In recipe circles, legend has it that a woman asked for a cookie recipe when dining at a restaurant, and when they told her it would cost her two-fifty, she agreed and told them to add it to her bill. But after she paid the check, she realized the cost of the recipe was two hundred and fifty dollars, not two dollars and fifty cents. She was so upset that she gave the recipe to anyone and everyone. I have no idea if this story is true, and I don’t remember where I got this recipe, but what I do know is that these cookies are delicious. The difference is in the texture and the amount of chocolate flavor. The blended oatmeal gives them a chewiness, and the grated chocolate melts into the dough, making this treat extra rich. At two hundred and fifty dollars, these cookies better be!
Belle’s $250 Chocolate Chip Cookies
½ cup butter, softened
½ cup sugar
½ cup brown sugar
1 egg
½ teaspoon vanilla
¼ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
1/3 cup grated semi-sweet chocolate (I used almond bark)
1 cup flour
1 ¼ cup oatmeal
¾ cups chopped pecans
1 cup chocolate chips
Using your food processor, blend the oatmeal until it is a fine powder. In a large mixing bowl, beat the butter, sugar, and brown sugar until fluffy. Stir in the egg and vanilla. In another bowl, mix together the salt, soda, baking powder, flour, grated chocolate, and blended oatmeal. Stir this into the butter mixture until smooth. Fold in the chocolate chips and chopped pecans. Using a cookie scoop, place balls of dough two inches apart on a baking sheet. Bake at 375 degrees for 10 minutes. Cool on wire racks.
