Belle’s Asian Chicken and Mushrooms

1 pound boneless, skinless chicken (breast or thighs), cut into thin strips

3 tablespoons soy sauce

1 tablespoon cornstarch

1 tablespoon oil

2 tablespoons minced garlic

1 teaspoon grated fresh ginger

8 ounces sliced mushrooms

1 medium bell pepper, sliced

2 green onions, sliced

2 tablespoons oyster sauce

¼ cup chicken broth

1 teaspoon sesame oil

½ teaspoon pepper

In a bowl, combine the chicken strips, 2 tablespoons of soy sauce, and cornstarch. Mix well and set aside for 10-15 minutes to marinate. In a small bowl, whisk together the remaining 1 tablespoon of soy sauce, oyster sauce, chicken broth, sesame oil, and black pepper. Set aside. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the marinated chicken and cook for 4-5 minutes until browned and fully cooked. Remove the chicken from the pan and set aside. In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add garlic and ginger, cooking for about 30 seconds until fragrant. Add the mushrooms and bell pepper, cooking for 3-4 minutes until softened. Return the cooked chicken to the skillet. Pour the sauce over the chicken and vegetables, stirring to combine. Cook for another 2-3 minutes until the sauce thickens slightly. Add the chopped green onions. Serve hot over steamed rice or noodles.
