A holiday appetizer that tastes like the season! My cranberry brie bites are one of my favorite appetizers during the holidays. They have flavors I love but are also what I feel fit with the season. Cranberry, mellow cheese, and a light, savory taste of rosemary are nestled in flakey, delicious puff pastry. These little bites are so easy to make but are so festive. They are a great way to begin a dinner party and are usually the centerpiece of the holiday table!
Belle’s Cranberry Brie Bites
1 package puff pastry (I use the refrigerated sheets)
½ wheel of brie cheese
½ cup cranberry sauce
2 sprigs fresh rosemary
Spray a mini muffin tin (24 cups) with cooking spray. Unroll the puff pastry on a large surface and using a pizza wheel or sharp knife, divide and cut the pastry sheet into 24 sections. Press each of the sections into the mini muffin cups. Place a small chunk (about 1 teaspoon) of brie cheese into each cup. Spoon 1 teaspoon of cranberry sauce over the top and place a tiny sprig of rosemary on top. Bake in a 400 degree oven for about 15 minutes or until pastry is golden and the cheese has melted.
