Belle’s Cheesy Mashed Potato Casserole

A make-ahead mashed potatoes with a delicious twist! Food is the highlight of many holiday events, which is why I love my cheesy mashed potato casserole. It’s the perfect dish for special occasion dinners. It is not only flavorful but also easy to make. And what may be the best part of this recipe is you can make it ahead, freeing you up to enjoy the evening. This dish uses leftover or make-ahead mashed potatoes, then tops them with smoky bacon and lots of melty cheese. When you’re ready, just pop it in the oven for about thirty minutes, and you’ll have a side dish that will have your guests coming back for seconds!

Belle’s Cheesy Mashed Potato Casserole

4 cups leftover mashed potatoes

2/3 cup milk

2 tablespoons unsalted butter, melted

1/2 cup sour cream

1 tsp salt

1 cup mozzarella, freshly shredded

1 cup cheddar cheese

1/3 cup cooked crumbled bacon

1/4 cup green onion, finely sliced

Mix the milk, butter, sour cream, and salt in a large bowl. Spread the potato mixture in a buttered 2-quart baking dish. Smooth the surface. Sprinkle with the cheeses and then the bacon. Bake covered with foil at 375 degrees for 25 minutes, uncover, and sprinkle with the green onions. Bake another uncovered for another 5-10 minutes.
