Belle’s Apple Pie Filling

A little prep work now and this year’s apple harvest can be enjoyed all year long! When the weather turns cold and snowy, I love pulling a jar of homemade pie filling from my shelves and enjoying a taste or that year’s apple harvest. My apple pie filling takes no time to make and is loaded with sweet sugar, cinnamon, and tart fruit. I use it in pies, crumbles, and crisps. It’s so easy to just dump in the pan and bake! A little prep work now, and you’ll have jars of ready-to-eat apple filling that will bring autumn’s bounty back to your table all year long.

Belle’s Apple Pie Filling

12 medium apples (any apples will do, but I like something tart like Granny Smith)

1 ½ cups sugar

1 cup water

8 tablespoons butter

3 teaspoon cinnamon

3 tablespoons cornstarch

Peel, core, and slice the apples. In a large pot, melt the butter over medium heat. Stir in the sugar and cinnamon. Stir in apples and water. Cover and cook, stirring occasionally for 4-6 minutes or until the apples are just slightly softened. In a small dish, combine the cornstarch and ½ cup of water until smooth. Add to the pan while stirring and continue to cook until the filling is thickened. Place in jars and seal by water bath or use right away in pies, crumbles, or crisps.
