The perfect addition to your Easter or Springtime brunch! Want a delicious addition to your Eastern brunch? My banana raisin rolls are so sweet and fluffy and yet they have no added sugar. They are simple to make and I love the combination of flavors. The ingredients are simple; I usually have them ready in my pantry. One of my favorite things about these rolls is the aroma that wafts through my kitchen while baking. It’s almost as delicious as their fluffy, sweet flavor. Slather them in butter or honey if you desire, but these rolls are great on their own. You can double this recipe, making it a great addition to your springtime spread!
Belle’s Banana Raisin Rolls
1 teaspoon active dry yeast
2 bananas, mashed
1 egg
2 tablespoons melted butter
½ cup raisins
1 teaspoon salt
2 ¾ cup flour
Sprinkle the yeast into ½ cup of warm water in a large mixing bowl. Let it sit for five minutes until it is bubbly and looks like foam. Add the bananas, egg, and melted butter and whisk together. Add the raisins and salt and mix. Add the flour ½ cup at a time, mixing well just until the dough is no longer wet and doesn’t come off on your finger when touched. Turn the dough onto a floured surface and shape it into a ball. Place the ball into a large greased bowl and turn to coat all sides. Cover with a towel and let it rise in a warm place for an hour and a half. When the dough has doubled, turn it onto the floured surface and divide it into eight to ten equal sections, depending on how big you want the rolls. Shape each section into a ball and place it in a greased baking dish. The rolls should not be touching. Cover and let rise until rolls are doubled in size. Bake at 375 degrees for about 20 minutes or until lightly golden.
