One ingredient but endless flavorful possibilities! In French cooking, it is called Beurre Monté, which simply means butter sauce. And even though it is the simplest recipe I have written about, it is one of my favorites. I actually have a hard time calling it a recipe because it only has one ingredient- butter. If you consider water an ingredient, then there are two, but regardless, this is so simple and makes any dish special. I use it to top fish, chicken, or vegetables, but I also use it to cook with. Chunks of potatoes cooked in this sauce are so flavorful. The secret is using cold butter and slowly cooking it into a creamy sauce. This isn’t melted butter but emulsified butter with a very different, creamy texture. Once you try it, you’ll begin to envision all the other ways you can use this new addition to your go-to favorites.
Belle’s Easy Butter Sauce
1 ½ tablespoons water
4 tablespoons cold butter, cut into cubes
Start by heating the water in a small saucepan. When it reaches a simmer, reduce the heat to low, and slowly whisk in the cubes of cold butter- a tablespoon at a time, until the water and melted butter have emulsified and formed a creamy and thick sauce. Be sure to keep the heat very low — if the sauce boils, it will separate. Use it immediately, or keep it covered on the stove on simmer until you’re ready to use it.
