Belle’s Best Gooey Brownies

I’ll admit it- I love cookie dough and cake batter. I know you aren’t supposed to eat those things unless you bake them, but I can’t help it. And one of my “tastes like it’s under-baked” favorites are my gooey brownies. These soft and chewy chocolate treats are the best brownie I’ve made. Forget boxed brownies. These are easy to make and so much better. I melt chocolate chips to add more chocolate flavor and also stir in some just before baking. They melt slightly, giving the brownie a sweet, molten surprise. They are hard to eat without getting chocolate everywhere- but who’s complaining?

Belle’s Best Gooey Brownies

1 ½ cups flour

1 teaspoon kosher salt

¼ cup unsweetened cocoa powder

2 cups chocolate chips, divided

1 cup butter, cut into pieces

1 ½ cups sugar

½ cup packed brown sugar

5 eggs

2 teaspoon vanilla

Preheat oven to 350°. Spray a 9 × 13-inch baking pan and line with parchment paper. In a bowl, mix together flour, salt, and cocoa powder. In another microwave-safe bowl, place the butter and 1 1/2 cups chocolate chips. Heat in 30-second intervals, stirring in between until the chocolate and butter are melted. Whisk in sugars and stir until combined. Add eggs one at a time, stirring well between each addition, then stir in vanilla. Add the flour mixture to the chocolate mixture and stir to combine. Fold in the remaining 1/2 cup chocolate chips. Pour the batter into the baking pan. Bake until a toothpick inserted into the center of brownies comes out with a few moist crumbs, about 40 minutes. Let cool completely in the pan.
