Belle’s Slow Cooker BBQ Chicken

A delicious dish for those back-to-school busy nights! It’s the time of year that I call the “busy season.” The kids are heading back to school, you’re trying to figure out new schedules, and you still haven’t unpacked from those last-minute vacations to enjoy the fleeting bits of summer. So, what’s for dinner? It’s the last thing you want to think about, which is why I love my slow-cooker BBQ chicken. It’s so easy, yet this dish’s flavor and heartiness are perfect for those hungry weeknights. The chicken is tender and tasty, and the sauce is delicious over rice. I use regular BBQ sauce and then jazz it up with some pantry staples. It’s a meal your busy family will definitely make time for!

Belle’s Slow Cooker BBQ Chicken

6 boneless, skinless chicken thighs

1 (18-ounce) bottle BBQ sauce

¼ cup apple cider vinegar

¼ cup brown sugar

1 teaspoon garlic powder

½ teaspoon dried chili flakes

Cooked Rice (optional)

In a small bowl, mix together the BBQ sauce, vinegar, brown sugar, garlic powder, and chili flakes.  Place the chicken into the slow cooker. Pour the sauce over the top. Cover the slow cooker and set on low for 6-8 hours. When finished, serve over rice, mashed potatoes, or on buns.
