Is it a side or a salad? Regardless, this tomato dish is sure to please! If you planted tomatoes this year, you are probably dealing with a bounty in your garden. I’m not complaining, but after making quarts of sauce and slicing them into salads, I was looking for a different way to use these sweet, juicy little fruits. My tangy baked cherry tomatoes are such a delicious dish. The baking brings out the sweetness, and the mix of tangy cheese and balsamic gives a savory flavor that is so satisfying. It’s just a few ingredients and less than thirty minutes, and you’ll have a side dish that will take center stage at your next meal.
Belle’s Tangy Baked Cherry Tomatoes
3 cups cherry or grape tomatoes, halved
1 teaspoon minced garlic
1 tablespoon extra-virgin olive oil
1 cup crumbled goat cheese or blue cheese
1 teaspoon Italian Seasoning
½ teaspoon salt
½ teaspoon pepper
Balsamic Vinegar
Lightly spray a rimmed baking sheet with cooking spray. In a large bowl, toss the tomatoes and garlic in the oil. Spread evenly over the tray. Sprinkle with the seasoning, salt, and pepper. Bake at 400 degrees for about 10 minutes or until tomatoes begin to wilt. Sprinkle with the cheese and bake another 10-15 minutes or until the cheese melts. Remove from oven and stir to coat the tomatoes. Cool slightly. Drizzle with balsamic vinegar before serving.
