Belle’s Veggie Ranch Thin Crust Pizza

A healthy and deliciously different way to make pizza! Pizza is always a welcome dinner at my house, and my veggie ranch thin crust is one of our favorites. It is a different way to make pizza and the combination of flavors is both healthy, delicious, and unique. I love the flavor and freshness of using uncooked tortillas for any recipe that needs flour tortillas and they make a wonderful thin crust for pizza. You can use many different vegetables for the toppings, but I’ve listed our favorites, and the ranch dressing for the sauce is so savory and flavorful. It’s not your traditional Italian pizza but this dish is definitely a favorite.

Belle’s Veggie Ranch Thin Crust Pizza

2 flour tortillas (I use the uncooked kind)

4 tablespoons Ranch-style salad dressing

1 cup shredded mozzarella cheese

Artichoke hearts, tomatoes, baby spinach, zucchini, black olives

If using uncooked tortillas, cook them on both sides in an ungreased frypan over medium-high heat until browned and puffy. Place the tortillas on parchment paper-lined baking sheets. Spread 2 tablespoons of the ranch dressing over each tortilla. Place half the cheese evenly over the tortillas. Add whatever veggie toppings you desire. Make sure you slice things very thin so they can cook evenly. Add the rest of the cheese over top. Bake at 425 degrees for about 15 minutes or until veggies are cooked and cheese is melted.
