Belle’s Chunky Cheesy Chicken Patties

This easy and delicious chicken dish is a weeknight favorite that everyone loves! These chicken patties are the kind of dish that gets requested again and again at my house. Crispy on the outside, tender and cheesy on the inside, they’re packed with flavor and simple enough for a weeknight dinner. While the patties fry up golden and delicious, whip up the garlic dipping sauce. It’s creamy, tangy, and the perfect cool contrast to the warm patties. I like to serve these with a simple salad or tucked into a soft bun with lettuce and tomato. But honestly, they’re best straight from the pan with plenty of sauce for dipping. Comforting, easy, and downright addictive—this recipe is a keeper!

And here’s a tip- cut your chicken when it’s still slightly frozen. It’s a lot less messy and so much easier to handle.

Belle’s Chunky Cheesy Chicken Patties

2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch chunks

2 eggs

1/3 cup mayonnaise

1/3 cup all-purpose flour

1 ½ tablespoon chopped fresh dill or 1 teaspoon dried dill

½ teaspoon salt

1/8 teaspoon pepper

1 ½ cups shredded mozzarella cheese

2 tablespoons oil

Garlic Sauce:

1/3 cup mayonnaise

1 garlic clove, pressed

½ tablespoon lemon juice

¼ teaspoon salt

1/8 teaspoon black pepper

Mix together the ingredients for the garlic sauce in a small bowl. Cover and place in the fridge. In a large bowl, mix the eggs, mayonnaise, flour, dill, salt, and pepper. Stir in the cheese and chicken chunks until well combined. In a large, rimmed fry pan, heat the oil over medium-high. Scoop ½ cupfuls of the mixture and place them in the hot oil. Use a spatula to flatten into patties.  Cook for about five minutes or until golden brown, flip and cook on the other side for another 5-8 minutes or until golden and a thermometer inserted into the center of the patty reads 165 degrees. Remove to a plate lined with paper towels and keep warm while you cook the other patties. Serve hot with the garlic sauce for dipping.
