Belle’s Roasted Parmesan Potatoes

Roasted potatoes that are comforting and just a bit fancy! There’s something downright magical about a crispy, cheesy potato—and Belle’s Roasted Parmesan Potatoes are just that kind of kitchen magic. With only a few simple ingredients, this side dish turns humble yellow potatoes into something crave-worthy. I make these when I want something comforting but just a little fancy. The trick is in the method: a pad of butter, a sprinkle of parmesan, and a dash of seasoning create a golden crust that sticks to the cut side of the potato. Press them down before baking, and be sure to let them cool for a few minutes once they’re done—that crust needs a little time to settle in. The result? Crispy, savory potatoes with a cheesy bottom you’ll want to pick right off the pan. Simple, satisfying, and always a hit—these little potatoes are one of those recipes that never lets me down.

Belle’s Roasted Parmesan Potatoes

6 small yellow potatoes

1/4 cup butter

1 cup grated Parmesan cheese

Garlic powder

Italian seasoning

Cut each potato in half lengthwise. Slice butter into 12 even slices. On a parchment-lined, rimmed baking sheet, place the butter evenly. Place one tablespoon of the shredded Parmesan onto the top of the butter and sprinkle the Parmesan cheese with the other seasonings. Using the cut side of the potato, press down on the cheese to coat the potato evenly and secure the butter and cheese. Bake at 400 degrees for 40 to 45 minutes, or until a fork can easily pierce the top of the potatoes. Cool for at least a FULL 5 minutes before removing from the pan, otherwise the parmesan crust won’t stick to the potato.
