Belle’s BBQ Chicken Stuffed Sweet Potatoes

Sweet potatoes are both hearty and delicious. They are also an excellent source of vitamins and fiber. They are also filling, especially when stuffed with barbecue chicken and other tasty ingredients. My barbecue chicken stuffed sweet potatoes are super easy to make and are an entire meal in one packed potato. They are similar to twice baked potatoes but with deliciously different fixings. Topped with tasty smoked Gouda or cheddar cheese and a sprinkle of green onions, and this dish is one the whole family will love.

Belle’s BBQ Chicken Stuffed Sweet Potatoes

4 large sweet potatoes

2 tablespoons extra virgin olive oil

Kosher salt

4 ounces cream cheese

3 tablespoons butter

2 cups cooked, shredded chicken or turkey

½ cup barbecue sauce

¾ cup shredded cheese (I use smoked Gouda)

¼ cup sliced green onions

Place the sweet potatoes on a rimmed baking pan. Rub them all over with the oil and then sprinkle with the salt. Bake at 375 for about an hour or until tender. Remove from the oven and let cool slightly. Cut a slit down the top of each potato and push the ends to open it up.  Scoop out the flesh, leaving a ½ inch shell. Place the potato flesh, cream cheese, and butter in a bowl, and mix well. Spoon the mixture evenly into the potato shells. Place the shredded chicken in a bowl and mix with the barbecue sauce. Spoon this in the shells over the potato mixture. Sprinkle with the cheese and then bake at 375 degrees for 15 minutes. Sprinkle with the green onions and serve.
