Belle’s Crispy Stuffed Chicken

A quick and easy chicken that tastes and looks like a special occasion! I love quick and easy meals but don’t get me wrong, they also have to be delicious, and when they have that “special occasion” look- that’s even better! My crispy stuffed chicken has all those qualities. This dish has tender and juicy chicken wrapped around a tangy, cheesy stuffing with a crisp, buttery coating. It sounds complex, but it’s so simple to make. Entertaining? This is a great dish to make ahead of time, so when you’re ready to eat, all you have to do is pop it in the oven or air fryer until it cooks up golden brown. And why wait for company? This tasty chicken will be a hit any day of the week.

Belle’s Crispy Stuffed Chicken

4 boneless skinless chicken thighs (or two breasts cut in half)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

2 cups baby spinach

4 tablespoons julienned sundried tomatoes (in oil)

4 slices provolone cheese

2 tablespoons melted butter

½ cup dried Italian bread crumbs

Using a zip-closure plastic bag, place the chicken thighs inside, and then using a mallet, pound the chicken until it is evenly ½ inch thin. Place each piece of chicken flat on a cutting board and sprinkle with the Italian seasoning and garlic powder. Place the spinach evenly over the top. Place the sun-dried tomatoes over that, and then finish with a layer of cheese. Roll each piece of chicken and secure it with toothpicks. Place the melted butter in a shallow bowl and the bread crumbs on a plate. Dip each piece of chicken in the melted butter and then into the bread crumbs. Place each piece of chicken in a 9 by 9-inch baking dish coated with cooking spray and then lightly spray each piece of chicken. Bake at 375 degrees until chicken is cooked through and no longer pink and the coating is a golden brown- about 30 minutes. You can also make this in the air fryer.
