A delicious bread that is almost too simple to make! There are few things better than freshly baked bread. The aroma fills the house, and the soft, warm texture is so delicious. My frozen roll focaccia is a wonderful way to enjoy this but without the work. This recipe is so easy. You simply let the rolls rise, top them with flavor, and then bake. There is no mixing or kneading, and yet you’ll have a flavorful loaf of focaccia that will taste like it’s homemade. I top the focaccia with sundried tomatoes and parmesan, but a light sprinkling of salt and Italian seasoning is also delicious. This recipe does take some planning because the bread has to rise, but all that is required is a timer. This bread is such a hit with my family that I’m almost embarrassed at how simple it is to make… well, almost.
Belle’s Frozen Roll Focaccia
6 frozen rolls (I use Rhoade’s Texas dinner rolls)
2 tablespoons olive oil
½ teaspoon kosher salt
½ teaspoon Italian seasoning
¼ cup sundried tomatoes
2 tablespoons shredded parmesan
½ teaspoon kosher salt
½ teaspoon Italian seasoning
Coat an 8 by 8-inch baking pan with 1 tablespoon of the oil. Place the rolls evenly spaced in the pan and turn them around to coat with the oil. Cover with plastic wrap and let rise for about 3-5 hours or until they fill the pan space. Don’t let them over-rise and get airy. They will continue to rise when they bake. Using your fingers (coated with oil), punch the dough, making holes almost through to the bottom of the dough. Drizzle with the remaining olive oil, and then sprinkle with the salt, seasoning, tomatoes, and cheese. Bake at 400 degrees for 20-25 minutes. Cool before slicing.
