Belle’s Creamy Ham and Potato Casserole

A creamy and delicious casserole that gives new life to leftovers! While I usually serve ham during specific seasons, such as Easter or Christmas, when I make my creamy ham and potato casserole, I always wonder why I don’t serve it at any time of the year. It’s a delicious and homey dish that the entire family loves.  The combination of hearty ham and tender potatoes coated in a creamy, slightly tangy, and cheesy sauce is the ultimate in comfort food. I almost always make this dish after we’ve had a traditional ham dinner, and have extra ham and potatoes. It’s a great way to use these ingredients, and with the addition of some simple pantry staples, you have a dish that gives new life to leftovers.

Belle’s Creamy Ham and Potato Casserole

3⁄4 cup chopped onion

1⁄4 cup chopped green pepper (optional)

2 tablespoons margarine

1 tablespoon flour

1 dash pepper

1 cup milk

1 cup shredded cheddar cheese

¼ cup mayonnaise

3 cups cooked and diced potatoes

2 cups cooked and diced ham

In a large fry pan, heat the butter until melted.  Add the onion and cook until tender. Stir in the flour and pepper. Whisk in the milk and then bring to a boil while stirring constantly. Reduce the heat and stir in the cheese and the mayonnaise. Continue to cook until the cheese melts.  Stir in the ham and potatoes and place the entire mixture into a 2-quart casserole dish.  Bake at 350 for 30 minutes.
