Belle’s Cocktail Meatballs

Cocktail meatballs- a delicious appetizer to help ring in the New Year! I think most of us are ready to put 2020 in the books and move on, and my cocktail meatballs are a great way to celebrate the New Year. They are tangy, savory, and slightly sweet. These cocktail meatballs are also easy to make and can be prepared ahead of time, making them a great party snack. If you want to use ready-made meatballs- that works too- but my meatballs are so simple and take no time to put together. Just mix them together, brown them, and then put everything in a slow cooker. They’ll be ready when you are. Here’s to 2021!

Belle’s Cocktail Meatballs

Meatballs:

1 pound ground beef

2 large eggs, beaten

½ cup dried Italian breadcrumbs

¼ cup finely chopped

¼ cup freshly chopped parsley or 1 tablespoon dried

½ teaspoon salt

½ teaspoon pepper

2 tablespoons oil

Sauce:

1 (14 ounce) can cranberry sauce (whole berry or jellied)

1 cup barbecue sauce

½ cup sweet chili sauce 

2 tablespoons apple cider vinegar

1 tablespoon Worcestershire sauce 

Pinch red pepper flakes

½ teaspoon salt

Mix all the ingredients for the meatballs together in a large bowl- except the oil. Shape into meatballs using a cookie scoop. Brown in the oil on all sides in a large frypan over medium-high heat, and then drain on paper towels. In a bowl, mix everything together for the sauce and then pour over the browned meatballs in a slow cooker. Toss to coat. Cook on high for 1-2 hours until everything is hot and meatballs are cooked through.
