Belle’s Creamy Ritzy Chicken Casserole

A satisfying and delicious casserole that is perfect for busy weeknights! Weeknights can often be hectic, especially if you have children with sports, lessons, or other activities. One of my favorite ways to enjoy a meal together, even when life is busy, is with a make-ahead casserole the whole family loves. My creamy ritzy chicken casserole has always been at the top of the list. It’s a smooth and slightly tangy mixture of creamy sauce and chicken with a buttery and crunchy cracker topping. There are just a few ingredients, and you can make it ahead of time and bake it whenever you’re ready. It’s a great way to use leftover chicken as well. It’s a delicious and homey comfort food that will make your hectic household want to sit back and enjoy- even if it’s just for a moment.

Belle’s Creamy Ritzy Chicken Casserole

2 cups cooked chopped or shredded chicken

1 can cream of chicken (or mushroom) soup

½ cup sour cream

½ teaspoon garlic powder

¼ teaspoon onion powder

½ teaspoon salt

¼ teaspoon pepper

1 sleeve butter crackers, crushed

¼ cup melted butter

In a large bowl, mix the soup, sour cream, and spices. Mix in the chicken. Spread the mixture in an 8 by 8-inch baking dish that has been sprayed with cooking spray. Mix together the crushed crackers and melted butter. Spread this mixture evenly over the chicken mixture. Bake at 350 for 30 minutes or until bubbly and crackers are slightly browned.
