A quick bread with all the flavor of pecan pie! A favorite dessert at my house is pecan pie. The gooey caramel center and the crunchy nut topping are so sweet and delicious. My pecan pie bread has all the flavor of our favorite pie in a moist and tasty bread. This recipe uses self-rising flour and comes together in minutes. Because it is sweet, I line my pans with parchment so the bread will come out easily for slicing. One addition that we really love is a touch of bourbon. It gives this treat a wonderfully tasty zip, but spiked or not, this bread will surely be a hit!
Belle’s Pecan Pie Bread
2 cups pecans, finely chopped
1 ½ cups self-rising flour
1 cup sugar
1 cup brown sugar
1 cup vegetable oil
4 eggs, beaten
1 teaspoon vanilla or 1 tablespoon pecan flavored bourbon
¼ teaspoon salt
¼ cup honey
2 tablespoons melted butter
Grease two large loaf pans with butter or nonstick spray and line with parchment paper. Mix the sugar, brown sugar, eggs, and oil in a bowl until well combined. Stir in the self-rising flour and salt. Add the vanilla (or bourbon), honey, and melted butter. Fold in the chopped pecans. Divide the batter between the two prepared pans. Bake at 350 for 30–35 minutes or until a toothpick inserted in the center comes out clean. Let cool in the pans for at least 15 minutes before removing to a cutting board for slicing.
