This dish is a one-pan meal that comes together in minutes. Cod is a mild and tender fish and sprinkled with a delicious blend of seasoning, it takes on all the savory flavor. This meal is loaded with protein, fiber, and vitamins, but when you unseal the foil and the herby aroma rises, you’ll forget that this dish is part of your healthy 2024 resolution.

Belle’s Seasoned Baked Cod and Broccoli

2 (4-6 ounce) pieces of cod (or other dense white fish)

2 cups fresh chopped broccoli

1 cup diced fresh or canned tomatoes

¼ cup lemon juice

¼ teaspoon each of dried paprika, Italian seasoning, lemon pepper, and salt

On a rimmed baking sheet, place a large piece of foil. Spray with cooking spray. Place the pieces of fish in the center and place the broccoli and tomatoes all around the fish. Crumple up the sides of the foil to make an edge around everything. In a small bowl, mix together all the seasonings. Sprinkle the fish and vegetables with the lemon juice and then sprinkle with the seasoning mixture. Place another piece of foil on top and seal with the bottom foil. Bake at 425 degrees for about 20 minutes or until fish flakes easily.
