A sweet and simple bread that is full of fall flavor! Even with the flurries of snow we’ve been seeing, I’m still in full fall mode. My apple fritter bread is perfect for this time of year. This is a simple and quick bread to make, and the flavor is so sweet and full of spice. It has a consistency like cake- so moist and delicious. And the aroma when it’s baking will make you want to find your favorite sweater and sit by the fire. I enjoy this with my morning coffee or at night as a dessert. Fall may be apple season, but this bread is one you’ll want to make all year long.
Belle’s Apple Fritter Bread
1 (15-ounce) box yellow cake mix
2 eggs
¼ cup oil
½ cup water
1 large apple, peeled, cored, and chopped
1/3 cup brown sugar
1 ½ teaspoons cinnamon
In a small bowl, mix the brown sugar and cinnamon together. Set aside. In a large bowl, mix together the cake mix, eggs, oil, and water. Beat for about a minute or until smooth. Pour ½ of the batter into one large (9×4 inch) or two smaller greased loaf pans. Sprinkle with half the chopped apples and half the sugar mixture. Top evenly with the rest of the cake batter, and then sprinkle the rest of the sugar mixture on top. Bake at 350 degrees for about 45 minutes or until a toothpick comes out clean.
