This recipe is one that will elicit comments like “To die for” and “the best thing I’ve ever tasted”. If you are a chocolate fan, this cake is for you. The Cracker Barrel restaurants serve a version similar to this and it is one of their most popular items on the menu. This cake is an old-fashioned recipe that combines rich and real ingredients to make a decadently moist and flavorful dessert. In my opinion, it is better than most high-end restaurant desserts I’ve had, and yet it is so simple to make. Simple. That is why it so good. Real ingredients, rich chocolate flavor, and so moist. The recipe could become your family’s new old-fashioned favorite.
Belle’s Chocolate Cola Cake
Cake
1 cup Coca-Cola (the original- not diet)
½ cup oil
½ cup butter
3 tablespoons baking cocoa
2 cups sugar
2 cups flour
½ teaspoon salt
2 eggs
¾ cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
Frosting
½ cup butter
2 ½ Tablespoons baking cocoa
1/3 cup milk
1 teaspoon vanilla
4 cups powdered sugar
In a saucepan mix together the cola, oil, butter and cocoa and bring to boil. Reduce heat and simmer. In large bowl mix together the sugar, flour, and salt. Pour the cola mixture over the flour mixture and beat well. Add the eggs, buttermilk, baking soda, and vanilla and beat well. Pour mixture into a greased and floured large baking pan (I use a 16 x 11 inch lasagna pan). Bake at 350 degrees for 25-30 minutes. While the cake is cooling, combine butter, cocoa, and milk in a saucepan. Cook until butter melts. Beat in remaining ingredients and spread evenly on cake while it is still warm.
