A lighter version of a cheesy and saucy favorite! Most healthier versions of our favorite dishes aren’t as hearty or satisfying, but my easy and healthy alfredo sauce is an exception. It combines the delicious and creamy taste of traditional alfredo but with ingredients that have fewer calories and less fat. This dish still has lots of smooth and cheesy flavor but uses Greek yogurt instead of cream. And it’s also so easy to make. In one saucepan, it all comes together in just minutes. You can serve this with pasta or use zucchini noodles for even fewer calories and carbs. I even use this to top cooked vegetables like broccoli and cauliflower. It’s a tasty and satisfying dish that will help you start the new year a little lighter.
Belle’s Easy and Healthy Alfredo Sauce
2 tablespoons extra virgin olive oil
2 tablespoons cornstarch
1 cup broth vegetable or chicken
½ cup skim milk
½ cup non-fat plain Greek yogurt
½ teaspoon salt
2 teaspoons garlic powder
½ teaspoon black pepper
½ cup grated parmesan
Cooked pasta or zucchini noodles
Heat olive oil in a large saucepan over medium heat. Sprinkle with cornstarch and whisk until smooth. While whisking, slowly add in the broth and milk. Continue whisking to combine until smooth. Turn the heat to medium-high and bring the mixture to a simmer. Cook and whisk until it starts to thicken. Remove from heat and slowly whisk in the Greek yogurt. Once combined, place back on medium heat and stir in Parmesan cheese, salt, pepper, and garlic powder. Simmer for an additional 2 minutes, whisking constantly. Stir in the cooked pasta and serve.
